Château Capitoul is a gem which lies between the sea and the “garrigue”. The view on the vineyards loosing themselves in the infinity of the valley before melting into the horizon between salt lakes and blue mountains is breathtaking.
The vineyard of Chateau Capitoul goes back to the 14th century, when it was exploited by the Cathedral of Narbonne, which gave its name to the Chateau. 

TERROIR
Ideally located in the middle of the Languedoc’s largest natural site, viticulture is practiced and reasoned, producing wines of highest quality and reflecting the best that the “Appelation La Clape” has to offer. In 2015, the appellation La Clape was accredited “Grand Cru”, thus joining other prestigious, internationally renowned French appellations. 

VINIFICATION
The château possesses an ultramodern cellar whose original architectural style is reminiscent of a ship. Syrah and Grenache are the principal components of the blend, which also includes some Carignan. The low yields result in maximum concentration and complexity. The grapes are harvested with great care, with double hand sorting and destemming. After light crushing skin maceration lasts 25 days in 60Hl conical wooden vats, at controlled temperatures – between 22 and 24°. The wine is then matured in French oak barrels of 1wine then in conical wooden vats for 3 to 6 months before bottling.

TASTING NOTES
Magnificent dense dark red colour. Very spicy nose (white pepper) with touches of black fruits (blackberry). An ample and very long mouth with velvety tannins. This very beautiful wine expresses by its concentration and its roasted notes all the complexity of the “terroir” of la Clape.

Food and wine pairing: filet mignon with pepper sauce, poultry supreme with cream sauce, Thai-style vegetable rice with soya beans and peppers.
Serving temperature: to be decanted 30 minutes before - 17°C 
Aging potential: 8 years
