Located in the heart of the largest classified natural site in Languedoc, Château Capitoul takes advantage of its unique location and stands as an exclamation point at the end of the peninsula. 
The “La Clape appellation” was recognised and elevated to the rank of vintage in 2015, joining the most prestigious French appellations with international renown.

TERROIR
Its 100 hectares of pine forests and moors and 64 hectares of vines in one piece, come to surrender to the sea. This vineyard is strongly influenced by the maritime entries and produces wines of great freshness. The geological diversity of the soils, clayey-gravelly, limestone-marly and clayey-limestone, accentuates the power and elegance of its vintages.

VINIFICATION
The grapes are harvested at the coolest hours of the night. They are then directly pressed for Grenache and bled for Syrah, away from oxygen, to ensure optimal preservation of the aromas. 
Settling at low temperature, temperature regulation of must between 14 and 16 °C.

TASTING NOTES
Pale pink color with pretty sparkling reflections. Pleasant aromatic complexity on the nose, with notes of small red fruits evolving towards exotic fruits and spices. Round and fresh on the palate, rich in fruity and spicy notes, with a lot of volume and sweetness thanks to the ageing on fine lees.

Food and wine pairing: BBQ stuffed mushrooms, prosciutto melon, grilled Provençal avocados or chicken brochettes with tapenade.  
Service temperature: 10-12°C

Family and independent since 1870, committed to environmental protection, they preserve the integrity of each of their listed natural sites. Since the end of 2019, all their estates, i.e. 1600 hectares of vines, have been labelled HVE (High Environmental Value). HVE certification attests to environmental excellence as reflected by the achievement of performance thresholds (performance obligations) in four areas, in terms of : biodiversity (presence of agro-ecological infrastructures on the farm such as hedges, grass strips, groves, etc.), phytosanitary strategy, fertiliser management, irrigation management.
